Our new friends G and G invited us to dinner the other night, along with a group of others from our palestra (gym). What a meal we had! Giorgio, it turns out, is a superb cook. For antipasti (pictured above) he served grilled zucchini, onion focaccia, bagna cauda and melanzane alla parmigiana (front left in the photo). I’ve never been a huge fan of what I think of as ‘eggplant parmesan,’ but Giorgio made his in the form of a light and delicate torta. There was not an excess of heavily spiced sauce, or great long strings of melted mozzarella, both of which are great in the right places but better omitted here. No, this was flavorful, but not at all heavy. In fact, it was so good that it got the nod for The Best Thing We Ate This Week. Delicious! Picked the last eggplants and made your recipe. Unfortunately, had to use store sauce as a blight wiped out our tomato crop. (It will be a long winter without our own sauce. ) However, a bumper crop of butternut squash!

Have tried it – gorgeous! I’m on my way to Rapallo at the end of the month – do you perhaps know if and when the market days are in that area? We’d like to do some of our own cooking with those wonderful fresh local ingredients. Any advise would be appreciated

That “melanzane alla parmigiana” looks fantastic! I love it when it’s light on the sauce and heavy on the cheese… how did he do it??
Well, I know this will sound like I’m being a smart aleck, but he did it by going light on the sauce and heavy on the cheese – and leaving out the mozzarella. The recipe is on the blog if you want to try it yourself; it’s not hard, and it is delicious! Thanks for checking in.
Enjoy the remnants of summer’s al fresco dining while you can. I’m envious of this! For the past two nights the temps dropped to 18°C (a bit on the chilly side for this islander) and I caught a slight head cold. Cold, hot, hot, cold….such odd weather patterns!
Ah! The dreaded Colpa d’Aria. I’m really sorry you’ve got a cold. ugh. We had so much wind last night we had to move inside for dinner -but it was back up in the 80’s today, and is still 25 (almost 80?) as I sit here tapping to you. C’mon down and we’ll give you a nice dinner – al fresco.
